'What's Old is New Again'
Once upon a time before cusine nouvelle, molecular gastronomy and masterchef there was a time (often now refered to as the dark ages) when dishes that today grace pub and club menus across the land, and that form the neculus for many a range of frozen TV dinners, were de rigeur for the finest of fine dining restaurants. These were the days of hock lime and lemon, of Australian Claret (cab shiraz) Burgundy (shiraz) Chablis (semillon) Port (usually grenache ) sherry, maderia and marsala...
My how times have changed over the last 30 - 40 years! So as with all fashion, everything old is new again, and in the world of food and wine this is equally true. In this spirit we revisit these classic wine styles (disguised under "new clothes" as they may well be) and look at how "cuisine" has changed (or not as the case may be).
Often dishes have been deconstructed and it is not obvious what they once were (and essentially still are). Old fashioned wine styles have new names, images, fancy marketing and back stories but in many cases what was really good back then still remains good today only it may appear slightly different...
